Did I miss something, or is it true that no US car maker still makes what one would consider "cars" for the US market? A couple of niche things like the Mustang and Caddy, but not much else?

True, 'tis all cross-overs and SUVs. Though something like a Ford Escape is more like a station wagon/estate car wearing 6" heels than an SUV.

Honda/Toyota/Mazda/Nissan/Kia/Hyundia all sell normal "cars". We have a few.
