Because the current restriction of output in the Strait from ~21 mbpd to about ~7 mbpd - and active threat of military action to disrupt other oil supply routes like the Gulf of Aden - is not going to persist indefinitely.

Iran will have greater control over the strait going forward than they did before the war, and they will undoubtedly exploit that to their advantage. And there may be some ongoing risk premium attached to oil resulting from the possibility of them shutting the strait for some reason or another in the future. However, such measures are unlikely to permanently result in the type of oil price increases we are currently experiencing. There has always been instability in the region and the risk of interruption of oil flows - but that means that the price spikes when the bombs start dropping and recedes when the fighting stops. It's not permanently priced at the "bombs are falling right now" level.
